Italian Carrot Rose Cake with a Lime Glaze

Yields

Cake ingredients


3-4 fresh carrots, peeled, ends removed and cut into 2 inch chunks

2/3 cup and 1 tbsp oil

1 tbsp orange juice

3 eggs at room temperature

3/4 cup packed brown sugar

1 1/2 cup and 1tbsp plain flour

1 tbsp and 1 tsp baking powder

1/2 teaspoon rose essence

1/4 tsp salt


Lime glaze ingredients


1/2 teaspoon butter

1/2 cup sugar

3/4 cup icing sugar

5 tablespoons fresh lime juice (2-3 limes)

Zest of 1 lime


1. Preheat the oven at 350F and grease a bundt pan with cooking spray or brush generously with oil.


2. Blend carrots, orange juice and oil until a creamy texture is formed.


2. Using an electric hand mixer, mix eggs and brown sugar and light and creamy, 4 minutes on high speed.


3. Mix the carrot mixture into the eggs with a spatula gently.


4. Sift in all the rest of the ingredients and carefully fold until combined, careful not to over mix. Once you see that there is not more flour showing, the cake batter is ready.


5. Pour into the prepared Bundt pan and bake for for 30-35 minutes at 350F. Be sure to check it after 30 minutes with a knife or toothpick and if it comes out wet, give it another few minutes.


6. After cooked, keep in the pan until it has cools. This takes about 1 hour. Then remove the cake from the pan by turning it upside down on a plate or chopping board and giving one hard tap on the counter.


7. Meanwhile make the glaze. Mix all the ingredients together and allow it to simmer on medium low heat for 5 minutes, mixing occasionally, then remove into a a bowl or jug.


8. Pour the glaze into the cake, followed by a sprinkle of lime zest and rose petals for garnish.
