With the current sugar shortage, I thought, why not try cake mix! Also representing the busy people out there, I thought its a brilliant idea because it includes everything you need, flour, salt, baking powder, baking soda, and sugar! This bag would literally save you so much time and dishes! And we all know that no-one is trying to be healthy at this time of the year with their Christmas baking. And low and behold, it worked!


Let's face it, a cookie named after the Grinch had to be zesty along with sweet. I went out on a whim to create these unusual cookies with unlikely ingredients and it was so worth it! They are a tasty and refreshing change from the typical cinnamon, ginger, all spice and vanilla cookies you usually get at this festive time of the year. My husband refused to let me share them and pouted when I did (and I only shared three!) I have them hiding in the pantry right now, he literally agreed with me that I needed to hide them or he would not stop eating them! My oldest son whose eight said they were his favourite cookie ever!


Make your kids squeal with excitement at the thought of Grinch cookies or share these with your friends and family by placing 3 neat little green cookies in a clear bag tied with a red bow. What a delight! Let's get started!

Lime Grinch Cookie Recipe

11 - 12 cookies



Cookie Ingredients


1 box (404g) of white cake mix - remove 2 tablespoons

3 tablespoons of course semolina flour (recommended but could be optional - read note below)

1 tablespoon sugar

½ cup butter (softened)

1 large egg at room temperature

1 egg yolk at room temperature

Juice of 3 limes

Zest of 3 limes

1/4 teaspoon Green gel food colouring


Coating ingredients

4 tablespoons powdered sugar

3 tablespoons cornstarch


12 red skittles


Method

  1. Preheat the oven to 350F and line a baking sheet with parchment paper.

  2. Mix together the icing sugar and cornstarch for the coating and set aside.

  3. Whisk together the cake mix, sugar and semolina powder until combines.

  4. Add butter and eggs and using a hand mixer, whisk together for 1 minute.

  5. Next pour in the lime juice, lemon zest and food colouring and mix on medium for a further minute.

  6. Create small balls using a small ice cream scoop or use two tablespoons to create a rough ball.

  7. Gently coat the balls with the icing sugar mixture and place on the baking sheet.

  8. Bake for 17 minutes until cracks form the top and the bottom is slightly golden brown. If they are too brown they will taste bitter so be sure to keep an eye!

  9. Remove from the oven, press 1 skittle on the side of each cookie while they are very hot and on the cookie tray. Allow them to cool on the tray for 5 minutes. If the cookies are too brown on the bottom, remove them from the tray immediately to prevent further browning.

  10. Repeat for the rest of the cookies and enjoy!


Note: This ingredient is used for crunch and it's a great texture, You can find this any Indian grocery store. If you don't have it, you can leave it out and not remove 2 tablespoons of the cake mix.
