I have combined the aromatic flavours of traditional Indian tandoori chicken with the modern convenience of air frying, resulting in crispy, juicy wings that pack a flavourful punch in every bite. The wings are paired with an optional easy chutney, creating a sensational mouthful every, single, time. It can also be paired with ranch dressing, either way, extraordinary to tuck in to.

Ready in 40 minutes and impressively flavourful, these chicken wings are different and a result of my experience making numerous Indian chicken dishes! First the chicken is marinated in baking soda, flour and a few spices. Then, it is air fried, all you have to do is turn it once. Meanwhile, the tandoori sauce to coat the wings in can be prepared along with the optional chutney. Once the wings are ready they are tossed in the delicious tandoori sauce and served. Each delicious wing can be dipped in the chutney or ranch and devoured.

Tips and Tricks for perfect Air Fried Tandoori Chicken Wings


How to choose the right wings: Quality is key when it comes to chicken wings. Opt for fresh, high-quality wings from a trusted source. Look for wings that are plump and free from any foul odours or discolouration. If possible, choose organic or free-range chicken for enhanced flavour.


How to prepare chicken wings: Before cooking, it's essential to prepare your wings properly. Start by patting them dry with paper towels to remove excess moisture. This step is crucial for achieving a crispy exterior. Next, add the flour, spices and garlic, then mix really well. The best way I say is to rub them well with your hands.


How to avoid the chickens sticking to the air frier: Preheat your air fryer to the recommended temperature. Once preheated, spray the tray and sides with cooking spray. This will avoid the skin of the wings sticking to the tray once it's have cooked arrange the seasoned wings in a single layer in the air fryer basket, making sure they are not overcrowded. Cooking in batches may be necessary depending on the size of your air fryer.


Garnishes and Accompaniment: To elevate your air fried chicken wings even further, consider adding fresh garnishes and serving them with complementary accompaniments. Sliced green onions, chopped cilantro, or sesame seeds can add a pop of color and flavor. Serve alongside crisp celery sticks, carrot sticks, and a cooling dip such as ranch or blue cheese dressing to balance out the heat of the wings.


The mint chutney (recipe below) to dip the chicken wings in before taking a bite elevates the entire eating experience.

Ingredients

2 teaspoons salt

2 teaspoons crushed garlic

2 teaspoons baking powder

2 teaspoons corn starch

1 teaspoon cumin powder

1 teaspoon coriander powder

Cooking spray

16 Chicken wings (tips removed)


2 tablespoons teaspoons oil

1/2 teaspoon salt

2 1/2 teaspoon sugar

1 small onion (diced small)

3 tablespoons crushed tomato or tomato paste

1 tablespoon Tandoori Paste

1/2 teaspoon coriander powder

1/2 teaspoon cumin powder

1/2 cup sour cream (full fat)

3/4 cup water (more if needed)

3 tablespoons cream or milk


Mint chutney ingredients

1/2 cup packed mint

1/2 cup full fat sour cream

3 teaspoons sugar

1 teaspoon salt

1 clove of garlic

1 teaspoon oil

1 green chilli (optional if you want heat)


Method


  1. Start by mixing together 1 teaspoon salt, 1 teaspoon crushed garlic, baking soda and corn starch. Then mix in 1 tablespoon oil and chicken wings and allow to rest for 5 minutes.

  2. Heat and grease the air frier, then air fry for 30 minutes on 350F, turning once halfway through.

  3. Meanwhile, heat the remaining oil in a pan on medium heat. Add in the onions and braze for 8-10 minutes until golden brown. Add the tomatoes and cook for a further 3 minutes. Add in the tandoori paste, remaining garlic, cumin powder and coriander powder and cook for a further three minutes. Finally, stir in the sour cream, water, cream, sugar. It will start to thicken, remove from the heat. Add more water if the sauce is too thick.

  4. To make the chutney simply blend together all the chutney ingredients.

  5. Once the chicken has cooked, place into the sauce and toss until fully coated. Now serve and enjoy by dipping into the chutney!
