Method |
1. Marinate the Shrimp: Combine shrimp with garlic, salt, oil, cumin, smoked paprika, and chili powder. Let marinate for 20 minutes. 2. Make the Chipotle Mayo: In a small bowl, mix together all the sauce ingredients until smooth. Taste and adjust honey or chipotle for balance. 3. Grill the Shrimp: Thread marinated shrimp onto skewers. If using wooden skewers, soak them in water for at least 30 minutes. Grill over medium heat for about 8–10 minutes, turning once, until cooked through. 4. Grill the Corn: Place corn directly on the BBQ. Grill for 15 minutes, turning every 5 minutes until lightly charred. Slice kernels off the cob once cool enough to handle. 5. Assemble the Tacos: Warm the tortillas, then layer with coleslaw, grilled shrimp, corn, avocado slices, and a generous drizzle of chipotle mayo. Serve with extra lime wedges if desired. LOVE IT?
