Ingredients

Pesto Mayo ingredients

  • 4 tablespoons mayonnaise

  • 2 tablespoons basil pesto (jar works great)


Chicken ingredients

  • ½ chicken breast, sliced in half lengthwise and tenderized

  • ½ cup basil pesto

  • 1½ teaspoons salt

  • 2 tablespoons olive oil


Sandwich ingredients

  • 2 slices sourdough bread

  • 1 tablespoon olive oil (for toasting bread)

  • ½ cup baby spinach

  • 4 fresh basil leaves, torn

  • 4 slices bocconcini cheese

• 3 slices tomato

Method


  1. In a small bowl, combine the mayonnaise and 2 tablespoons of basil pesto. Mix well and set aside.

  2. Season the chicken breast with salt on both sides, followed by a spread of pesto evenly on both sides of the chicken.

  3. Heat 2 tablespoons of olive oil in a pan over medium-low heat. Add the chicken and cook until golden brown, about 5 minutes per side, or until fully cooked through. Remove from the pan and let rest for a minute.

  4. Wipe the pan clean. Add 1 tablespoon of olive oil and increase heat to medium. Toast both slices of sourdough until golden and crisp on both sides. Add more olive oil if needed.

  5. Spread half the pesto mayo on one slice of bread. Layer with spinach, cooked chicken, torn basil leaves, bocconcini, and tomato slices. Spread the remaining pesto mayo on the second slice of bread and place it on top.

  6. Enjoy your sandwich warm for the best texture and flavour!
