Among the vibrant and diverse world of Mediterranean cuisine, this full of flavour, creamy and indulgent dip is one of my favourites and it only takes 15 minutes to make! Whether it's for a part or gathering, it is always pleasing. My version of this dip has, honey for sweetness, onion, garlic and dill for flavour, and brazed red onions for crunch. It's also a perfect dip to cozy up to when you just want to treat yourself and indulge. This dip pairs perfectly with naan, pita, bruschetta bread or small pieces of toasted sour dough bread.

Feta Cheese


At the heart of this appetizing dip is the Mediterranean gem - Feta cheese. Known for its crumbly texture and tangy flavour, Feta adds a creamy richness to the dip that perfectly complements the other ingredients. Feta, traditionally made from sheep's milk, creates a velvety base that carries the aromatic essence of garlic, the piquancy of red onion, and the herbaceous notes of dill. Paired with mayonnaise, the texture is perfect to indulge into.


Garlic: A Pungent Powerhouse


No Mediterranean dip is complete without the robust flavour of garlic. The addition of finely minced garlic cloves infuses the dip with a bold, aromatic kick. Garlic not only contributes to the dip's distinct taste but also brings its well-documented health benefits, including antioxidant properties and immune system support. The marriage of garlic and Feta in this dip creates a symphony of flavours that dance on the palate.


Red Onion: Adding a Sweet and Sharp Twist


I added red onion, not only for it's vibrant hue and slightly sweet yet sharp taste, but it elevates the dip's overall flavour profile. Sliced red onions provide a textural crunch and a burst of colour that enhances the visual appeal of the dish. Beyond its culinary contributions, red onions bring health benefits, including anti-inflammatory properties and a rich supply of antioxidants.


Dill: An Herbaceous Finale


Completing the trio of star ingredients is dill, I had to include a fragrant herb that adds a refreshing and herbaceous note to the dip. The finely chopped dill leaves lend a bright green hue and a burst of freshness, balancing the richness of Feta and the intensity of garlic and red onion. Dill not only enhances the dip's flavour but also offers potential health benefits, including digestive aid and anti-inflammatory properties.

Garlic, red onion and Dill Feta dip Recipe

Serves

6 as an appetizer with bread


Ingredients


200g Feta cheese

1/4 cup mayonnaise

1 tablespoon of lemon juice

1 tablespoon honey

1/2 cup sliced red onion

6 tablespoons of water

1 teaspoon chopped dill

1 1/2 teaspoon garlic

6 tablespoons olive oil


1 teaspoon chopped dill for garnish

1 teaspoon crushed chilli peppers for garnish


Method


1. Begin by blending crumbled Feta, 1/2 teaspoon minced garlic, 3 tablespoons of olive oil, 5 tablespoons of water, 1/4 cup of mayonnaise, lemon juice and 1 teaspoon chopped dill in a food processor until a smooth and creamy consistency is achieved.


2. Braze the onions on medium heat in 3 tablespoons of oil for 3 minutes, then add 1 teaspoon of minced garlic and continue to braise for another 2-3 minutes until translucent.


3. Spoon the dip into a plate or bowl, drizzle the onion mixture over the top (including all the oil!) sprinkle chopped dill and chilli flakes over the top for seasoning. Mix and enjoy with naan, pita, bruschetta bread or small pieces of toasted sour dough bread! Adjust the quantities to suit your taste preferences.
