Ingredients


  • 2 tbsp extra virgin olive oil

  • 1/2 cup onion, chopped

  • 4 cloves garlic

  • 2 sticks of celery, chopped

  • 1 carrot, peeled and chopped into cubes

  • 2 russet potatoes, chopped into cubes

  • 1 vegetable bouillon cube mixed with 2 cups of water

  • 3 tsp fresh thyme , chopped

  • 1/2 tsp smoked paprika

  • Salt and pepper to taste

  • 350g frozen green peas, rinsed in cold water (this is key to great flavour!) To Serve: 1 pack of cooked Gnocchi (cheese filled is best!), tossed in a pan until golden with 1 tablespoon of olive oil to serve OR toasted bread.

Method

1. Heat a large frying pan over medium heat and add the olive oil.


2. Toss the onions, carrots, celery and garlic into the hot pan, stirring every couple of minutes to make sure they cook evenly.


3. After 10-12 minutes, when the vegetables are lightly sautéed, add the potatoes, smoked paprika, and thyme. Give it a good mix, then add broth.


4. Once the potatoes are tender (10 to 15 minutes), toss in the rinsed peas and 1 cup of water. Stir, then cover the pan and reduce the heat to low-medium. Let it simmer for 5 to 7 minutes, or until the peas are just tender. Take off the heat and let it rest for about 5 minutes.


5. Now, blend everything until silky smooth.


6. Pour the puree back in the same frying pan, heating it over medium heat and slowly whisk in more water depending on how creamy you want your soup. Taste and adjust the seasoning to your liking.


7. Pour into shallow bowls and garnish with thyme and pepper.
