This Greek-inspired BBQ feast brings together smoky, tender chicken skewers, crunchy vegetables and a bright velvety sauce. Ingredients

Chicken

  • 2 chicken breasts or thighs, cut into 1-inch cubes

  • 3 tablespoons olive oil

  • 4 teaspoons crushed garlic

  • 2 teaspoons salt

  • 1 tablespoon finely chopped dill

  • 1 tablespoon oregano

  • 4 tablespoons fresh lemon juice + 1 tablespoon to sprinkle over the top once cooked

  • 1 teaspoon lemon zest

  • 1 small red onion, cut into large cubes 2-3 teaspoons Red chilli flakes (optional for heat lovers)


Vegetables

  • 4 tablespoons olive oil

  • 2 teaspoons salt

  • 2 teaspoons oregano

  • 1 red pepper, cut into 2-inch cubes

  • 1 zucchini, cut into thick slices

  • 7 large cremini mushrooms*, quartered


Mushroom and Garlic Sauce

  • 1/2 cup Greek yogurt

  • 1/4 cup mayonnaise

  • 2 tablespoons olive oil

  • 1/2 teaspoon crushed garlic

  • 1/4 teaspoon salt

  • 1/3 teaspoon lemon zest

  • 1 tablespoon fresh dill, chopped 5 pieces of grilled mushrooms will also be used, this is listed in the vegetable ingredients.

Method


  1. Marinate the Chicken Mix all chicken marinade ingredients in a bowl. Add the chicken pieces and coat well. Cover and refrigerate for at least 2 hours, or up to 24 hours.


  1. Prepare the Vegetables

    In a separate bowl, toss all the vegetables ingredients until well coated.


  1. Assemble the Skewers

    Thread chicken pieces onto skewers, adding red onion between the pieces. Thread the vegetables onto separate skewers.


    Tip: If using wooden skewers, soak them in water for at least 30 minutes beforehand to prevent burning.


  2. Grill

    Grill the chicken and vegetable skewers over medium heat until cooked through and slightly charred. Sprinkle 1 tablespoon of lemon juice over the cooked chicken.


  1. Make the Mushroom Sauce

    Blend the yogurt, mayonnaise, olive oil, garlic, salt, lemon zest, lemon juice and 5 grilled mushroom pieces until smooth. Pour into a bowl and stir in the chopped dill.


  1.
