Your questions answered for Lemon and Coconut Moon Popsicles
1. Can I use light coconut milk instead of full-fat coconut milk?
Yes, you can use light coconut milk, the popsicles will however be less creamy. Full-fat coconut milk gives a richer texture.
2. How long do these popsicles last in the freezer?
When stored properly in an airtight container, these popsicles can last 6-8 weeks in the freezer while still retaining their fresh flavour.
3. Can I substitute the sugar with a different sweetener?
Absolutely! You can use honey, agave syrup, or even a sugar substitute like Stevia. Just adjust the quantity to taste.
4. Are there any other flavour combinations that work well with this recipe?
Yes, you can experiment with adding a bit of lime juice for a lemon-lime twist or adding some fresh berries for a fruity variety.
5. How do I make these popsicles vegan?
These popsicles are already vegan if you use sugar. If using honey as a sweetener, replace it with a plant-based option like agave syrup.
6. Can I use bottled lemon juice instead of fresh?
Freshly squeezed lemon juice provides the best flavour, but you can use bottled lemon juice if you like that taste. Just make sure it’s 100% lemon juice without any added sugars or preservatives.
7. What if I don’t have popsicle molds?
You can use small paper cups and wooden craft sticks (non-coloured) as an alternative, insert the sticks after the mixture has frozen for 2 hours so it stays straight in the middle. Simply peel away the paper cup once the popsicles are frozen.
Tips for Perfect Lemon and Coconut Moon Popsicles
Balance the Flavours Adjust the sweetness and tanginess to your preference. If you prefer a less tart popsicle, reduce the lemon juice slightly.
Layering For a more aesthetic look, freeze layers of the coconut and lemon separately.
Popsicle Molds Silicone molds are easier to work with as they make it simpler to remove the popsicles without breaking them.
Storage Store the popsicles in an airtight container in the freezer to prevent ice crystals from forming.
