As the days grow warmer, there’s nothing quite like a refreshing and thirst quenching popsicle to cool you down. Lemon and coconut moon popsicles are the perfect blend of tangy and creamy, offering a delightful treat that’s both tasty and pretty, ready in just 15 minutes. These popsicles are not only delicious but also easy to make at home with just 4 ingredients! For those who are Vegan, this will become your go to!

These popsicles taste like something you would find at a unique and contemporary shop in a cute town or a market. They are fresh, healthy, tasty and refreshing! I am not a fan of tart anything but these Lemon and Coconut Moon Popsicles have my heart!

Recipe for Lemon and Coconut Moon Popsicles

Ingredients


  • 1 cup of coconut milk

  • 1/4 cup of freshly squeezed lemon juice

  • 1/4 cup and 1 tablespoon of honey or sugar

  • 1 teaspoon of vanilla extract

  • Optional: Thin lemon slices cut into quarters

  • Optional: Shredded coconut for extra texture


Method


1. In a small saucepan, combine the lemon juice, lemon zest, and sugar. Heat gently until the sugar dissolves completely. Let it cool to room temperature.


2. Pour into a jug or bowl, and mix in the coconut milk and vanilla extract until combined.


3. Add Texture (Optional): If you love a bit of extra texture, mix in some shredded coconut.


4. Carefully pour the mixture into popsicle molds. Optional: Slide a lemon slice to the edge of each mold if you want an effect and extra texture.


5. Place the popsicle sticks into the molds and freeze for at least 6 hours or until completely solid.


6. Un-mold and enjoy! To release the popsicles, run warm water over the outside of the molds for a few seconds. Serve immediately and enjoy your homemade treat!
