Mini quiche with garden vegetables

These adorable quiche are tiny pockets of pie crust filled with fresh vegetables, eggs, cheese and seasonings. They turn out to be a treat and taste like cross between a delicious pizza and Jamaican patty! They pack a punch of flavor and are perfect for any meal, whether it's for the kids lunch box, breakfast, brunch, a light dinner or pot luck. They're also a fantastic way to use up those fresh veggies from your fridge or garden.

We’re in the transition between the end of summer vacation and the start of a new school year and that’s why this mini garden quiche is going to be your new favorite lunch to give the children. It captures the comfort of home cooked lunches but at school! It has vibrant fresh vegetables and protein from the eggs that the kids can enjoy to keep them going through their day. 


The foundation is a comforting pie shell that I got from the local grocery store. All I did was remove it from the freezer, 10 minutes before cooking.


And then the filling is fresh and vibrant. It includes eggs, and any vegetables you might have. I added spring onions that I had in the fridge and peppers and garlic that grow in my garden every year. 


I also added milk, some spices and the magic spice, oregano, (whatever you do, don’t skip this step)  All of this will become more flavourful in the oven. And then I whisked those ingredients together really well, mix in some grated old cheddar cheese and pour it into pie shells.


Bake this in the oven for 10 minutes and it’s done. They taste great freshly made but also when they are taken out of the fridge or thawed from the freezer. The full recipe list is down below.

Can I make these quiches without a crust for a low-carb option?

Definitely! You can make crustless mini quiches by simply greasing the muffin tin well and pouring the filling directly into the cups. They’ll still be delicious and even easier to prepare, just make sure you decrease the amount of bake time.

Mini quiches pair wonderfully with a variety of sides. Try serving them with a fresh green salad, fruit salad, or a light soup. They also make a great addition to a brunch spread with muffins, croissants, and other finger foods.

Mini quiche with garden vegetables Recipe

Quiche ingredients

  • 12 ready made pie shells

  • 3 extra large eggs*

  • 1 large mushroom

  • 1 garlic clove

  • 3 tablespoons chopped red peppers

  • 1/2 spring onion

  • 1 tsp onion powder

  • 2 teaspoons origano

  • 1/2 tsp salt

  • 3 tablespoons milk

  • 3/4 cups of grated old fort cheddar


Method


1. Remove the pie shells from the freezer and place them on a baking sheet, defrost for 10 minutes before baking.

2. Heat oven to 375F.

2. Whisk the eggs, onion powder, black pepper, vegetables and milk together well.

3. Mix in 1/4 cup of cheese.

4. Pour 2 tablespoons of the egg mixture into each cup or until full

5. Sprinkle some cheese and a pinch of oregano on top of the egg mixture in each cup (don't skip this step, it's the magic ingredient!)

6. Bake for 25-30 minutes, until the tops are golden and enjoy hot! You can also refrigerate these and enjoy them the next day.
