Ingredients


Dry ingredients

  • 1 cup (200g) sugar

  • 1 2/3 (213g) cup all-purpose flour

  • 1/2 tsp kosher salt

  • 1/4 tsp baking soda

  • 1 1/2 tsp baking powder


Wet ingredients

  • 1/2 cup (115g) salted butter - melted

  • 1 tbsp cup oil

  • 1/2 cup (120ml) sour cream at room temperature

  • 1/2 (120ml) whole milk at room temperature

  • 3 egg whites at room temperature

  • 1 tbsp of Vanilla extract

  • 1/2 tsp lemon extract (optional but recommended)


Other ingredients

  • 1/4 tsp red food colouring

  • 1/4 tsp green food colouring

  • 1/4 tsp blue food colouring

Method

  1. Line 12 cupcakes liners in a cupcake pan and preheat the oven to 350 C.

  2. In a bowl, whisk the dry ingredients together until well combined.

  3. In a separate bowl, whisk the wet ingredients using a hand mixer until well combined, if it's clumpy don't worry too much.

  4. Pour the wet ingredients into the dry ingredients and gently mix until combined. do not over mix.

  5. Divide the mixture evenly into three small bowls. Add a different colour to each and mix well. Add more colour as needed.

  6. Fill each cupcake liner with 1 tablespoon of blue coloured batter, followed by 1 tablespoon of green coloured batter, and finally, 1 tablespoon of blue coloured batter

  7. Bake for 18-22 minutes, check if ready by inserting a toothpick, if it comes out clean they cupcakes are ready.
