Juicy on the inside and golden on the outside, they’re perfect for meal prep, party appetizers, lunch or an easy weeknight dinner. Ingredients

Marinade Ingredients

  • 450g ground chicken

  • 1 teaspoon ginger, crushed

  • 1 tablespoon olive oil

  • 1 tablespoon Thai red curry paste

  • 2 teaspoons salt

  • 1/4 cup chopped spring onions

  • 1/2 cup breadcrumbs

  • 1 tablespoon lime or lemon juice

  • 1/4 cup diced red peppers

  • 1/4 cup cilantro (not packed), chopped


Cooking Ingredients

  • 2 tablespoons olive oil

  • 1 onion, sliced

  • 1/2 heaped cup red pepper, sliced + more for garnish

  • 2 teaspoons garlic, crushed

  • 3 tablespoons Thai red chilli paste

  • 1 tablespoon brown sugar

  • 1/2 teaspoon salt

  • 1/4 cup chopped spring onions + more for garnish

  • 1/4 cup cilantro (not packed), chopped

Method

Method

  1. Mix the marinade ingredients together. If preparing ahead, refrigerate for up to 24 hours. Otherwise, shape into 1 inch meatballs.

  2. Heat the olive oil in a pan over medium heat. Add the onions, peppers, and garlic. Sauté for about 3 minutes stirring often, until the onions are translucent.

  3. Add the Thai red curry paste and sizzle for another 1-2 minutes.

  4. Add the meatballs, cover and cook for 3 minutes, untouched. Remove the lid and gently turn with a fork or shake the pan to turn them, cooking for another 2 minutes, lid off. Continue turning until the meatballs are browned on all sides and cooked through (internal temperature should reach 165°C).

  5. Remove into a bowl and garnish with chopped cilantro, spring onions and red peppers


Panini: Serving Suggestion for a lunchbox meal or a hearty lunch Spread mayonnaise on panini bread and layer with mozzarella or cheddar cheese. Slice the meatballs in half and place them inside. Butter the outside of the bread and press into a hot pan with a spatula until golden and crisp on both sides.
