Easy Lemon Loaf Cake

Ingredients

Loaf

  • 250 g all-purpose flour (app. 2 cups)

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1/3 cups oil (70 g)

  • Zest of 3 lemons

  • 3 tablespoons of lemon juice

  • 1 cup sugar (200 g)

  • 3 large eggs

  • 3/4 cup sour cream


Whipped Cream (optional)

  • 1/2 cup whipping cream

  • 1/2 cup sugar

  • 1 teaspoon vanilla essence

  • 1/2 teaspoon crushed cardamom seeds


Toppings (optional)

  • 6 strawberries, sliced

• 1 lemon slice cut into quarters

Method

  1. Line a loaf pan with parchment paper and preheat the oven to 320°F (175°C).

  2. In a bowl, mix together the dry ingredients: flour, baking powder, and salt.

  3. In a separate bowl, combine the sugar, oil, zest of 3 lemons, and the juice of 1 lemon.

  4. Add the eggs one at a time, mixing between each addition.

  5. Stir in the sour cream.

  6. Add the dry ingredients and gently fold to combine.

  7. Pour the batter into the prepared loaf pan and bake for 55-60 minutes, or until a toothpick inserted into the centre comes out clean.

8. If frosting, whisk together all the whipped cream ingredients until stiff peaks form. Spoon or pipe onto the cake. Garnish with strawberries and lemon slices.
