Brush the chicken on both sides and pan-fry on medium heat with 1 tablespoon of olive oil until cooked through, around 6 minutes on each side. 2. Prepare the dressing: Whisk together all the dressing ingredients in a small bowl. 3. Assemble the salad: In two serving bowls, place a bed of spinach. Top with sliced tomatoes, sliced chicken, cucumber cubes, onion, olives, and feta cheese. Move the spinach to one side of the bowl and dollop hummus on the other side. 4.
