The Best Rajma (Kidney Bean Curry)

A classic North Indian inspired curry, Rajma takes humble kidney beans and transforms them into something rich and flavourful. Warming spices, ginger, garlic, and Kasoori methi, finished with a touch of sour cream for balance. Serve with naan or rice for a true taste of home.  Prep time:12 hours (includes overnight soak)

Ingredients

  • 1 cup red kidney beans (soaked overnight in cold water)

  • 3 cups water

  • 3 tablespoons olive oil

  • 1 bay leaf

  • 1 teaspoon cumin seeds

  • 2 green chilli, slit in half

  • 1 medium onion, finely chopped (around 1 cup)

  • 3 teaspoons crushed garlic

  • 2 teaspoons crushed ginger

  • 1 green chili, crushed (more if you prefer a spicy curry)

  • 1 teaspoon coriander powder

  • 2 teaspoons salt

  • 1/2 teaspoon turmeric

  • 1 teaspoon Kashmiri red chili powder

  • 3/4 cup blended whole tomatoes

  • 1 teaspoon brown sugar

  • 2 tablespoons Kasoori methi 1 teaspoon lemon juice

  • 1/2 cup sour cream

•. 1/4 cup chopped cilantro

Method

  1. Pressure cook the kidney beans with 3 cups of water for 50 minutes, or until soft.

  2. Meanwhile, in a skillet or pot over medium heat, warm the olive oil until hot.

  3. Add the bay leaf, cumin seeds, and slit green chilli. Sizzle for about 1 minute, until fragrant and lightly browned.

  4. Add the onion and cook until light golden, about 5 minutes, stirring frequently.

  5. Stir in the ginger, garlic, and crushed green chili. Sauté for another 1-2 minute, until light brown. Then add the salt, turmeric, chili powder, and coriander powder. Cook for another 30 seconds.

  6. Pour in the blended tomatoes and cook for 5 minutes, until the oil begins to separate from the mixture.

  7. Add the cooked kidney beans and mix well, simmer for 5 minutes.

  8. Stir in the lemon, brown sugar, Kasoori methi, then remove from the heat.

  9. Serve topped with a dollop of sour cream and a sprinkle of chopped cilantro.
