Taco Inspired Mini Quiche Recipe

These mini quiches are little parcels of flavour with a taco twist. They have crisp tart shells filled with eggs, vegetables, taco seasoning and cheddar cheese, baked until golden. They’re simple to prepare, packed with flavour, and make the perfect grab and go breakfast, lunchbox addition, or snack and taste fantastic hot or cold. Taco Inspired Mini Quiche Recipe

Ingredients


  • 12 ready-made tart shells

  • 4 extra-large eggs*

  • 3 tablespoons milk

  • 1/3 teaspoon salt

  • 1 packet (35g) taco seasoning (adjust to taste if necessary)

  • 1/4 cups spring onion, finely chopped

  • 1 garlic clove, finely chopped

  • 1 teaspoon lime zest

  • 1/4 cup cilantro, chopped

  • 1/4 cup red peppers, chopped

  • 1 cup grated old fort cheddar cheese

Method


  1. Preheat oven to 375°F (190°C). Place frozen tart shells on a baking sheet and let them thaw for about 10 minutes.

  2. In a bowl, whisk together the eggs, milk, taco seasoning, and salt.

  3. Stir in the red peppers, spring onion, garlic, lime zest, cilantro, and 2/3 cup of the cheddar cheese.

  4. Spoon about 2 tablespoons of the mixture into each tart shell. Top with the remaining cheddar cheese.

  5. Bake for 25 minutes, or until the filling is set and golden. Let cool slightly before serving.


Tip: These tarts freeze beautifully, simply thaw to eat. They taste great cold from the fridge or warm when just baked. *This recipe was created in collaboration with Egg Farmers Alberta
