Method |
1. Crack the eggs into a bowl. Stir gently with a whisk from side to side (do not whisk, as this introduces air bubbles, swirling keeps the eggs creamy rather than fluffy) until the yolks are combined. 2. Add the salt, Kashmiri red chilli powder, cilantro, fresh chilli, and milk. 3. Swirl again for about 2 minutes until the ingredients are thoroughly incorporated. 4. Place a pan over very low heat and add the butter. Heat until fully melted. 5. Pour in the egg mixture. Using a spoon, stir gently about 5 times to create curds, then distribute the shallot slices evenly across the top of the omelette and leave undisturbed. 6. Allow the omelette to cook the top looks soft and custardy but set. 7.
