Crispy Spinach & Cream Cheese Phyllo Cups

Ingredients

  • 190g cream cheese, room temperature

  • 1/4 cup chopped onions

  • 1/4 cup chopped red peppers

  • 2 tablespoons chopped jalapeño or green peppers

  • 1/2 cup chopped spinach

  • 3 cloves grated garlic

  • 1/4 teaspoon salt

  • 1/4 teaspoon crushed black pepper

  • 1/8 teaspoon sugar

  • 4 sheets of phyllo pastry

  • Oil spray

Method

  1. Spray oil onto a mini muffin pan.

  2. Pull apart 2 sheets of pastry, stack them together, and cut into 3 1/2-inch squares.

  3. Take 2 squares, place them over each other, and carefully tuck them into each muffin cup. Repeat for the remaining cups. You may need to work in batches.

  4. Keep the phyllo tightly covered to prevent it from drying out.

  5. Bake at 375°F for 25 minutes or until golden brown.
