400 grams white mushrooms 2 tablespoons melted butter 1 teaspoon salt 1/2 teaspoon pepper 4 cloves of garlic, smashed 2 tablespoons packed of chopped fresh thyme leaves* 1 tablespoon olive oil 1/2 cup chopped onion 2 carrots chopped into cubes 1 1/2 stalks of celery 2 tablespoons butter 2 tablespoons all purpose flour 2 cubes chicken stock mixed in 4 cups of hot water 1 cup warm whole milk 350g fresh Gnocchi 1 tablespoon corn starch mixed with 1 tablespoon cold water 1/2 teaspoon salt *Use half the amount for dry thyme |
Method |
1. Heat the oven to 425F. Line a baking sheet with parchment paper, add mushrooms, salt, pepper, smashed garlic, melted butter and 1/2 tablespoon thyme. Bake mushrooms until browned, around 27-30 minutes. 2. Heat olive oil in a pot on medium heat, then add onions, carrots and celery, and braze for 10 minutes, stirring intermittently. Add butter and flour and stir until light golden brown. 3. Add 1 tablespoon thyme and warm chicken stock, then cook for 20 minutes. 4. Pour in the milk, gnocchi, remaining thyme, corn starch mixture and salt and bring to a simmer for 5 minutes. Add the mushrooms and remaining butter/juices from the baking pan (spare a few mushrooms for garnish if you prefer). 5. Pour the soup into bowls and garnish with thyme leaves and roasted mushrooms.
